Spicy Fish Fry

Fish fry with spicy Indian Masala....
This is a simple fish fry recipe but it is delicious with all rice varieties especially with Sambar rice,Curd rice 
and Rasam...

Ingredients for Marination:

Marination
Decide the quantity of each ingredient according to your taste....
1. Chilly powder
2. Turmeric powder
3. Corriander powder
4. Salt
5. Ginger-Garlic paste
6. Lemon

*  Clean the fish and marinate with the above ingredients
*  You can add vinegar instead of Lemon
*  Refrigerate it for mininum of 2 hours


Frying:


*  Add Oil in a pan. I used sunflower oil and you can use any oil of your taste
*  Fry the fish when the oil is ready
*  Now enjoy the spicy Fish fry..

Curd rice, Sambar rice, Rasam and fish Curry too...

*Fish is filled with omega-3 fatty acids and vitamins such as D and B2 (riboflavin).
*Fish is rich in calcium and phosphorus and a great source of minerals.

Indian Filter Coffee

Indian Filter Coffee

In this post I am going to show you to make a perfect South Indian Filter coffee.
Im a great fan of  filter coffee and learn't this recipe from my mom.
You can find the stepwise procedure of making Coffee and I have attached the pictures for your reference.
And I am sorry for the poor picture quality :(

The combination for perfect coffee powder is 60% coffee and 40% chicory.
You can grind you own coffee powder from coffee beans.But I am using the branded filter coffee powder.
My brand is the famous 'Leo Filter coffee powder'

Now let's go for the coffee preparation....

1. Heat the filter to so that any blocks in the holes get cleared.It makes the decoction to penetrate the holes   easier....





2. Add the coffee powder as desired. I added 2 spoonful of powder to make coffee for two people...

  3. Add hot boiling water to the coffee powder and close the top lid. Wait for sometime so that the decoction gets seperated...

4. After 10 minutes collect the clear decoction.You can see it in the picture below...

5. Now add Sugar and Milk to the decoction. Use more decoction if you want your coffee to be stronger.
    Always use concentrated milk as it increases the flavour of your coffee...

 6.Now Serve the coffee hot.... :)

Thakkali Kadayal

Thakkali Kadayal is spicy tomato syrup which is prepared with ripped tomatoes and its tastes best for Idly and Dosa....
'Thakkali' means 'Tomato' , 'Kadayal' means 'Smashed '
Ingredients:
Ripped Tomatoes-5 (Medium sized)
Gingelly Oil
Mustard Seeds
Urad dal
Anise
Jeera
Curry Leaves
Chopped Garlic-10 pieces
Green chilly-3
Onion-2
Grinded Coconut-Grind 5 pieces of coconut with 1/2 spoon of Jeera
Chilly powder
Turmeric powder
Corriander powder
Salt
Method:
*Boil the tomatoes for 5 minutes and peel off the skin
peeling the Tomato Skin

*Smash the tomatoes. Smash it with a blender or a mixer Grinder
Smashed Tomatoes
*Add the Gingelly oil in a kadai
*When oil gets heated,add Mustard seeds
*When mustard splutters add Urad dal , Curry Leaves , half spoon of Jeera and Anise..
*Add Onion,green chilly and chopped Garlic
*Temper till the added items reach golden brown color
Tempering

*Add the required Salt,Chilly powder,Turmeric powder and Corriander powder
* Now add the Smashed tomatoes
Adding the smashed tomatoes

*Add some water and allow the mixture to boil
*When the mixture gets cooked , add the grinded coconut
Adding the grinded coconut

*Now close the lid and allow the mixture to boil again
*When the mixture reaches the correct consistency switch off and add few corrainder leaves...

Tomato Rice

Tomato Rice is an excellent dish for Lunch and is easy to prepare ....
Ingredients:
Boiled rice-1/4 kg
Gingelly Oil (sesame oil)
Cloves-2 piece
Cinnamon-1 bark
Cardamon-2 piece
Mustard-1 spoon
Urad dal-1spoon
Channa Dal-1spoon
Curry Leaf-7 to 8 leaf
Onion-1(chopped)
Tomato-3(chopped)
Ginger-Garlic paste-2 spoons
Powder:
Chilly powder
Corriander powder
Turmeric powder
Salt
Tomato Rice

Method:
*Boil the rice with 1:1.5 ratio water and keep aside
i:e 1.5 cups of water for 1 cup of rice
*Make a Tomato paste and mix with the rice
Note: Add adequate Gingelly oil and salt while mixing the paste and rice which adds taste

Tomato paste:
*Heat the Gingelly oil
*When oil gets heated add cloves,cardamon and cinnamon
*When the spices gives aroma add mustard seeds
*After the spluttering of mustard seeds add urad dal and channa dal
*Fry them till golden brown color is reached
*Add onions and Ginger-Garlic paste
*Fry till the onions and Ginger-Garlic paste leaves off the raw smell
*Add Turmeric powder,Chilly powder,Corriander powder and salt
*Now add the chopped tomatos
*Let the tomatos cook and add water if needed
*Make a paste consistency (Gravy consistency)
Tomato paste is ready
Note: Can add vegetables in gravy if wished.I used Green peas here

Best With:
Tastes good with Papad and pickle

*Gingelly oil lows BP and cholestrol and is an powerful antioxidant
*Tomato is good for heart ,hair,kidneys and eyes

Prawn / Shrimp Gravy

Ingredients:
Prawn-1/2 kg
Oil
Mustard -1 spoon
Powdered Anise- 2 spoons
Onion- 2 sliced
Ginger Garlic Paste- 2 spoons
Tomato Onion Paste-1+1 respectively
Chilli powder
Turmeric powder
Corriander powder
Salt
Method:
* Clean the prawns and marinate with few pinches of Salt and Turmeric powder for an hour
Raw Shrimp

*Fry the Powdered Anise in any Vegetable oil
*When it reaches golden brown add Mustard seeds
Note: Anise may taste bitter if fried for long time.Just make it to golden brown.It may leave you a nice aroma and that is the correct stage

*When Mustard starts spluttering add the sliced onions
*I used to add Ginger-Garlic paste soon after adding onions. Its because both should be cooked well to get rid of that raw smell
*Add Tomato-Onion paste soon after the raw smell of Ginger-Garlic vanishes
*Add the required Salt,Chilly powder and corriander powder
*Sprinkle few drops of water and let the paste to be cooked
Preparing the Gravy Masala


*Now add the marinated Prawns but don't add water
Just adding the prawns


*Prawns have a tendency to loose water when heated.So just close the lid and let the mixture cook well
Note:You can add water later if you think its required
*Add Water,salt and chilly powder according to the taste you wish
Prawns getting cooked


Here is the Shrimp/Prawn Gravy ready.
This is a very simple dish and easy to cook
Note:Make it a Gravy or even a Dry Gravy if you wish
Prawn/Shrimp Gravy
Best With:
Rice (specially with curd and Rasam), Dosa, Idly
Health Benefits:
Prawns are rich source of Protein and low in Saturated fats.
Shrimps and prawns do contain a lot of omega-3 fatty acids

Coconut Chutney

Ingredients
                  To Grind (Image below)
  Coconut              -1/2 cup
                                                      Fried Channa dal-1 spoon (Fry the channa dal without oil)
    Green Chilly       -2 chillies
             Ginger                 -2 small pieces
    Salt                     -To taste

Ingrediants
                      Tempering (Image Below)
Mustard seeds
Curry Leaves
Urad dal
Red chilly

For Tempering
Method
* Grind all the ingrediants with required amount of  Water and Salt
* Saute the ingrediants given for tempering 
* Mix the tempered ingrediants with the grinded ones


Coconut Chutney
Best With:
Dosa and Idly

Health Benefits:
Coconut  helps in the problems of kidney, reduces the risk of cancer, and diabetes.
It also helps in digestion.

Kenthatan

kenthatan is the curry(kootu) made with dhal and all possible vegetables.Its normally prepared during pongal festival
Ingredients:
The ingredients I have used are
Kenthatan (vegetable sidedish)
Thoor dhal(thuvaram paruppu)
Channa dhal
channa
Dry green peas
Dry mochai
potato
sweet potato
Drumstick
Brinjal
plantain
onion
tomato
coconut
Masalas:
turmeric powder
chilli powder
Anise(sombhu)
salt

Method:
* Pressure cook all pulses(channa/Mocahi/green peas) with salt
* Pressure cook thoor dhal and channa dhal with turmeric powder and salt
* When it is done keep the dhal to boil and add onion and tomato.Keep stirring the mixture.
* Add salt,turmeric powder and chilli powder as desired
* Now add all the vegetables one by one.
* Add hard vegetables first(i.e. potato,plantain,sweet potato)
* When the hard vegetables come to half boiled state add the soft veggies(i.e.bringal,drum stick,cooked     pulses)
* When the vegetables are done add a grinded paste of coconut and anise
* Allow the curry to boil and add fried clove,cinnamon, cardamon and   curry leaves
* Finally garnish with coriander leaves

Best With:
Dosa,Idly,Chapati and Rice too

Added pulses and Dhals are rich in protein which helps in Body Building

Channa dal sundal

Channa dal sundal
This Channa dal sundal is an instant sundal. Soaking the dal for 1 hour is enough for cooking..
Ingredients:
Channa Dal
Pepper Powder
For sauteing:
Mustard
curry leaf
Asafoetida
Red chilli

Method:
*Soak Dal for 1 hour
*Pressure cook the dal with required salt
*Drain the cooked dal from water
*Now saute mustard seed,curry leaf,redchilli and a pinch of asafoetida
*Add the channa dal to the sauted ingredients and add pepper powder for spicy flavour

Best With:
Hot Tea and Strong Coffee
